Haha, no worries. Thank you! And this is hardly a “debut”… I actually worked in the food industry for over a decade, and had a paleo food blog for six or so of those years, which is where these recipes and photos come from. This is more like a cautious return to the parts of that life that I enjoyed, still leaving behind the parts that drove me crazy. Also have to credit my chef ex-husband for the cook the garlic by itself garlic strategy, among several other pro tips I picked up from him.

Hi Anya - Long time Chris Ryan fan here, and I have enjoyed your writings as well. I am a professional chef, and applaud your recipe writing debut! Great direction on the garlic sautee, most people don't specify the the "sautee garlic by itself" move, which is crucial whenever you sautee garlic. A suggestion: Sautee the bacon from raw (and your recipe should read "cooked bacon") and sautee the onions etc. in the fat it renders for more bacon flavor!
